There’s just something about a hot skillet, fresh corn, and butter that feels like pure comfort. This skillet corn with smokey butter is the perfect side dish for any cowboy-inspired meal—simple, packed with flavor, and made for gathering around the table.
And speaking of corn… have you ever heard of the Corn Palace?
A Quick Story About the Corn Palace
I hadn't either until we were traveling through South Dakota during our full-time RV days. We had just sold our first fifth wheel in Montana and were headed to Sioux Falls to pick up our new one. Along the way, we made a stop in Mitchell, SD, home of the Corn Palace—a building completely covered in corn!
We got there about 30 minutes before closing, only to find police surrounding the building. Apparently, there were rumors of a riot starting in town, so our visit was cut very short. We snapped a quick picture, grabbed a sticker, and hightailed it back to our hotel.
Ever since corn recipes have always reminded me of that whirlwind trip. If you ever find yourself in South Dakota, it’s definitely worth a visit—hopefully under calmer circumstances!
Why This Skillet Corn Belongs on Your Table
This skillet corn isn’t just any corn. It’s lightly charred, buttery, and smoky, with just the right balance of sweetness and depth. Whether you’re pairing it with Cast-Iron Ribeye with Cowboy Butter or just need an easy side dish, this one’s a keeper.
What You’ll Need
A cast-iron skillet – A must-have for achieving that perfect sear
Fresh or frozen corn – Both work great, but fresh is unbeatable
Smokey butter – A mix of butter, smoked paprika, and a touch of honey
A good spatula – Ideal for flipping and stirring without losing any golden kernels
A little spice – A pinch of cayenne for warmth, or leave it out if you prefer it milder
How to Make It
Heat your cast-iron skillet over medium-high heat and melt a little butter.
Add the corn and let it char slightly before stirring.
Mix in the smoky butter blend and stir until everything is coated and golden.
Finish with a sprinkle of flaky salt and fresh herbs if you’re feeling fancy.
